Superiority of foods can be considered from different perspectives. I will highlight a few. Nutrition Nutritional quality of food is key. All foods should provide basic nutrition. It is a generally accepted idea that traditional foods tend to be of superior nutritional quality due to minimal processing they undergo. Research has shown that processing tend to strip food of key nutrients rendering it nutritionally inferior at the end of the processing line. This has made the process of fortification a key requirement for processed foods to compensate for the lost nutrients. Food safety This can be argued either way. Processing should make the food safe. That is the essence. It is mostly achieved at the end of the processing line. Through processing, dangerous chemicals such as cyanide in cassava can be reduced to safe levels for consumption. It should also be noted that processed foods are almost always preserved chemically to improve their shelf stability. Some of these chemical preservatives have shown detrimental effects to human health. Cost Most traditional foods are considerably cheaper than processed conventional foods. They are also nutritionally diverse, which makes them offer more value to the user. Most modern foods have been stripped down with the major aim of increasing profitability at the expense of the consumer. Convenience Modern foods beat traditional foods in terms of convenience. One would have to eat a variety of foods to satisfy their dairy nutritional requirements as compared to the modern foods that have all the necessary nutrients packed in convenient packages that can be taken on the go. Today, we can enjoy instant coffee, tea, and other beverages. We also enjoy high their relatively high quality due to the controlled processes. Longevity I would say that traditional foods have a better longevity as compared to modern foods. Foods like sweet potatoes would be easily propagated using local cultivars without problems. Enter modern commercial farming systems and you can hardly propagate crops using cultivars. Farmers have to depend on seed breeders for every season. This removes control from the hands of the farmer making them vulnerable and placing them at the mercy of big corporations that care about nothing but profit. Variety Traditional foods have very few varieties because the foods are taken minimally processed. Modern processing has produced a lot of variety hence one food can be enjoyed in various forms. For instance, wheat products have been greatly diversified to produce a myriad of other products apart from the usual bread. Traditional beverages and modern beverages can be compared too Fermentation Fermentation of millet as we know reduces antinutritional factors such as Tannins. also the fermentation microbiota produces acids such as lactic acid which contributes to microbial safety of the beverages. Also the microorganisms have been classified as probiotic which impart healthy benefits to the consumer. Modern fermented products one undergoes pasteurization soon after completion of the fermentation process such as beers. The Modern Fermented porridge is not really fermented since citric acid is added to give the acidic taste. “With more studies of Yogurts with added preservatives” Sugars Majority of moderns have high amounts of added processed sugars, this have been implicated with increased cardiovascular disease and obesity.
